- In a mixer jar except water mix all the wet ingredients (papaya puree, sugar, vanilla essence, white vinegar, cooking oil). Blend the mixture to a smooth paste. Keep aside.
- In another bowl take all the dry ingredients (maida, wheat flour, salt, baking soda). Mix well.
- Add wet papaya mixture to the dry maida mixture. Mix little by little. Add water and mix well to a smooth lump free batter. Batter should be thick but pouring.
- Pre heat oven to 180*C for 10 min. Grease and dust the cake pan.
- Pour cake batter into the cake pan and sprinkle brown sugar on top. Bake for 30 min.
- Take it out of the oven and let it cool completely. Invert the cake pan on the plate.
- Slice and serve.
- Adjust sugar to taste.
