- Preheat oven to 180.. In a bowl mix the oil and spices to create a spice rub.. once mixed rub it all over ypur chicken thighs

- Chop up all your veg and garlic and pop into the tray around your chicken.
- Drizzle all the veg and chicken with a bit of oil and pop into the oven for about 50 mins (dont worry chicken wont dry out)
- Take out the oven and serve with cous cous, fresh herbs and seeds x
